Secoli di servizio in sala tra 4 mura, un tetto e un numero di tavoli con cui accogliere gli ospiti sono stati sconvolti in poche settimane. Come ripensare nuovi scenari e nuove abitudini di scelta e di consumo, ormai chiaramente regolati da digitale, tecnologia e social network? Partendo dai dati e dai flussi di crescita di abitudini rinnovate, il corso si snoda tra rischi e opportunit\u00e0 che la tecnologia e il digitale offrono nella progettazione di nuove formule di
